Teriyaki Salmon Poke Bowl

Asian greens and avocados are currently in season. Which means it couldn’t be a better time to create your own fresh poke bowl. Whether it’s lunch or dinner, poke bowls are a healthy and delicious meal option filled with nutritional goodness.Ingredients: 2 x salmon fillets (skin off)  Teriyaki marinade/teriyaki sauce Ginger sauce/Ginger paste Soy sauce   3 cups cooked brown rice 1 avocado, finely sliced 1 carrot, spiralised/shredded 1 cucumber, spiralised 1 lettuce/ bag of lettuce  Âœ bunch radishes, finely sliced 2 sheets nori, roughly sliced (not necessary) ÂŒ cup pickled sushi ginger (garnish)Method: Raw Salmon Option: 1. Cut salmon into approx. 1.25cm cubes  2. Mix in 2-3 table spoons of teriyaki sauce and 1 teaspoon of soy sauce Cooked Salmon Option: 1. Marinate salmon with a few table spoons of teriyaki marinate/sauce (chose your preference), add a teaspoon and a half of ginger sauce and a drop of soy sauce. 2. Bake salmon fillets in oven for 10 minutes. 3. Remove salmon from oven and let salmon rest for 5 minutes  Remaining Method: 1. Serve salmon in a bowl with rice, lettuce, carrot, avocado, cucumber, radish and some nori. 2. Swirl some extra teriyaki and soy sauce on top and garnish with some pickled ginger.  Want to go even healthier? Use light soy sauce & make your own homemade teriyaki sauce! Throw in some edamame and a few slices of tomato, and seaweed If you like a little twist
 Add in some cube cut mango pieces & a few pinches of sesame seeds as a topping!Homemade Teriyaki Sauce: ÂŒ cup of light soy sauce 3 tablespoons brown sugar (you can also try coconut sugar/nectar, or honey
 it may change the flavour a bit!) 1 clove garlic (minced) 1 Tea spoon ginger (grated) 1 Table spoon water 1 Table spoon corn-starch Âœ cup water  Method:  1. Mix corn-starch and water and keep aside 2. Heat a pot *medium heat is fine 3. Add water, soy sauce, honey, garlic and ginger into pot and stir 4. Once the mixture starts to bubble, add the corn-starch and water mixture. Stir continuously for just under 10 minutes. 5. Remove pot from under the heat and set aside for 10-12 minutes (this will allow the sauce time to thicken) 6. Enjoy!  Plan to use the teriyaki sauce later? This homemade sauce can be stored for around 1-2 weeks. The texture may change due to the corn-starch, so you may have to reheat it in a pot and mix it up a bit again!
